Got the spicy chicken enchilada again but this time…
On Italian bread! Going this route verses the flatbread does make a difference. More carbs therefore feel fuller and it didn’t fall apart.
When we ordered it, we mentioned to the preparer that his idea of adding mozzarella was great! He was so happy! He add a FULL bag of fritos into our sandwich and was generous with the cheese and veggy! See, it pays to be nice!
Now the price doesn’t feel as bad lol.
The best part when visiting my parents? The home cooked food, of course!

Oven fried chicken wings!
Dip chicken wings in flour then egg then bread crumbs! Bake at 375 degrees for 40 minutes.
With a side of onion rings please! Not pretty but tasty! =)
Got this at the Christmas tree shop in Staten island. Easy instructions, three and a half cups of water and dump the whole bag in. Add in some kielbasa for some protein!
Boil and then simmer for 10 minutes. Let it sit another five minutes afterwards.
You know I HAVE to have veggy with my meals! Sauteed romaine lettuce with garlic, salt and black pepper. Enjoy!
When you have leftover garlic dipping sauce from Papa Johns?
You make garlic bread! Brush the garlic goodness onto bread and bake it in the oven. 350 degrees for 15 minutes, flipping halfway.
Can’t have garlic bread without linguine with meatballs! Bon apetite!
Take your favorite pancake mix, add in a can of spiced pumpkin puree and eggs and vegetable oil. Butter a pan and add half a cup of batter for each pancake. Flip when you start to see bubbles forming. Once it’s cooked through, add syrup, Done!
The new chicken enchilada with fritos chips and chipotle sauce
A foot long too…wasn’t cheap either. Costed almost 9 bucks! But how did it taste?

Added in lettuce, pickles and the person who worked there suggest mozzarella cheese. The fritos and lettuce added a nice crunchy texture to a otherwise soft and mushy flatbread and shredded chicken. Didn’t really taste the cheese tho.
It was a little pricey but didn’t regret trying it out.
On the left is sauteed bok choy and on the right, stir fry spare ribs tips! Cooked the bok choy with oil, salt and garlic.
The Chinese supermarket sold these rib tips by the pack and cheap too! Just cut up the rib tips into bite size pieces and cook with your fav sauce! I use black bean sauce with chili peppers in chili oil.
Home made stir fry noodles with beef, broccoli and onions cooked with lo mein sauce! Yup, there is such a sauce available in Chinese supermarkets!
Need at least two bunches of watercress, they shrink a lot!
Boil some water with some protein….I had saved up a bunch of wing tips and so used that. Pork bones or meat works too!
Once it boils, add in carrots and boil some more. Lastly add in the watercress. Depending on how soft u like the veggy, it can take up to two hours from start to finish
Skim off any gunk that surfaced. Don’t forget to salt! Enjoy!
